  • 1 cup Ditalini pasta
  • 2 tablespoons olive oil
  • 1 pound Italian sausage alternative (ground turkey or chicken)
  • 5 cloves garlic (minced)
  • 1 onion (diced)
  • 1 cup carrots (chopped)
  • 3 stalks celery (diced)
  • 3 cups chicken broth
  • 16 ounces tomato sauce
  • 15 ounces diced tomatoes
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/2 teaspoon Italian seasoning
  • 1 cup water
  • 15 ounces red kidney beans (rinsed/drained)
  • 15 ounces Great Northern beans (drained/rinsed)

Instructions

  1. Cook Ditalini pasta according to package directions; drain and set aside.
  2. In a Dutch oven, heat 1 tablespoon of olive oil over medium heat. Add Italian sausage alternative, cooking until browned and crumbly; set aside.
  3. In the same pot, add remaining olive oil and sauté garlic, onion, carrots, and celery for about 3–4 minutes until tender.
  4. Stir in chicken broth, tomato sauce, diced tomatoes, basil, salt, pepper, Italian seasoning, cooked sausage alternative, and water; bring to a boil.
  5. Reduce heat and simmer for about 15 minutes for flavors to meld.
  6. Add rinsed beans and cooked pasta; stir until combined and heated through.
  7. Serve hot and enjoy!
