  • 12 oz. crawfish (defrosted if frozen)
  • 1 stick butter
  • 4 T. mayonnaise
  • 2 T. Creole mustard
  • 1 stalk celery (rinsed)
  • 1 green onion (rinsed)
  • Cajun seasoning
  • Hot sauce

Instructions

  1. Hard-boil the eggs by placing them in a medium pot covered with water. Bring to a gentle boil for 2 minutes, then turn off the heat and cover for 11 minutes.
  2. Cool the eggs under running water, then shell them and place them in a mixing bowl.
  3. In a skillet, melt butter over medium heat; add crawfish, green onions, parsley, hot sauce, and Cajun seasoning. Cook until warmed through.
  4. In another bowl, mash the yolks from the boiled eggs with mayonnaise, mustard, and seasoning until smooth.
  5. Fold in the crawfish mixture into the yolk filling.
  6. Fill each egg white with the crawfish-yolk mix and chill before serving.
