Ingredients

- 12 oz. crawfish (defrosted if frozen)
- 1 stick butter
- 4 T. mayonnaise
- 2 T. Creole mustard
- 1 stalk celery (rinsed)
- 1 green onion (rinsed)
- Cajun seasoning
- Hot sauce
Instructions
- Hard-boil the eggs by placing them in a medium pot covered with water. Bring to a gentle boil for 2 minutes, then turn off the heat and cover for 11 minutes.
- Cool the eggs under running water, then shell them and place them in a mixing bowl.
