- 1 lb boneless, skinless chicken breasts
- 12 oz rotini pasta
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1 cup cubed Velveeta cheese
- 1 cup grated Parmesan cheese
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and black pepper, to taste
- 3 cloves garlic, minced
- 1 cup reserved pasta water (if needed)
- 1 tablespoon chopped parsley, optional for garnish
Instructions
- Season chicken strips with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
- In a large skillet over medium-high heat, add olive oil and 2 tablespoons of butter. Sear the chicken until golden-brown and fully cooked; keep warm.
- Cook rotini in salted boiling water until al dente. Reserve pasta water before draining.
- In the same skillet, lower the heat to medium. Sauté minced garlic in the remaining butter until fragrant.
- Add heavy cream and bring to a gentle simmer. Stir in Velveeta until melted, then add mozzarella and Parmesan until thickened.
- Toss cooked rotini into the sauce until well coated. Serve with seared chicken on the side.
