  • 1 lb boneless, skinless chicken breasts
  • 12 oz rotini pasta
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1 cup cubed Velveeta cheese
  • 1 cup grated Parmesan cheese
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • 3 cloves garlic, minced
  • 1 cup reserved pasta water (if needed)
  • 1 tablespoon chopped parsley, optional for garnish

Instructions

  1. Season chicken strips with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  2. In a large skillet over medium-high heat, add olive oil and 2 tablespoons of butter. Sear the chicken until golden-brown and fully cooked; keep warm.
  3. Cook rotini in salted boiling water until al dente. Reserve pasta water before draining.
  4. In the same skillet, lower the heat to medium. Sauté minced garlic in the remaining butter until fragrant.
  5. Add heavy cream and bring to a gentle simmer. Stir in Velveeta until melted, then add mozzarella and Parmesan until thickened.
  6. Toss cooked rotini into the sauce until well coated. Serve with seared chicken on the side.
