  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup crumbled feta cheese
  • 1/2 cup Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 1 garlic clove, minced
  • 23 tablespoons olive oil
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley or dill, chopped
  • 1/4 cup Kalamata olives (optional)

Instructions

  1. Season cubed chicken with olive oil, smoked paprika, ground cumin, garlic powder, onion powder, salt, and pepper. Toss until well-coated.
  2. In a skillet over medium heat, cook the seasoned chicken cubes for about 6–8 minutes until golden brown and fully cooked.
  3. Meanwhile, combine crumbled feta cheese, Greek yogurt, lemon juice, minced garlic, olive oil, salt, and pepper in a mixing bowl. Mix until creamy.
  4. Assemble by layering cooked rice or quinoa in bowls. Top with sautéed chicken cubes and add cherry tomatoes, cucumber, red onion, and parsley or dill. Drizzle with feta sauce before serving.
