Ingredients

  • 8 oz fettuccine or spaghetti
  • 1/4 cup heavy cream
  • 1/4 cup cream cheese, melted into sauce
  • 1/2 cup grated Parmesan cheese
  • Zest of 1 lemon
  • 2 cloves garlic, minced
  • 1/2 small onion, finely diced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook pasta in salted boiling water until al dente. Reserve 1/4 cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat. Add sliced chicken breast seasoned with salt and pepper. Cook until golden brown.
  3. Stir in minced garlic and diced onion until fragrant.
  4. Lower heat; add heavy cream and melted cream cheese to the skillet. Mix in grated Parmesan until smooth.
  5. Combine drained pasta with the sauce and adjust consistency with reserved pasta water if needed. Finish with lemon zest.
