  • 1 cup heavy cream
  • 2 cups chicken broth
  • 1 pound boneless, skinless chicken breast, diced
  • 2 cups uncooked penne pasta (or any short pasta)
  • Salt and pepper to taste
  • 3 cloves garlic, minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried Italian herbs
  • 2 cups fresh spinach, roughly chopped

Instructions

  1. In a large skillet over medium heat, add olive oil. Season diced chicken with salt and pepper, then cook until browned (5-6 minutes). Remove and set aside.
  2. In the same skillet, add chopped turkey bacon (or omit) and cook until crispy (4-5 minutes). Stir in minced garlic for the last minute.
  3. Pour in chicken broth and scrape the bottom of the skillet for added flavor. Bring to a simmer before adding heavy cream, paprika, and Italian herbs.
  4. Add uncooked penne pasta directly into the sauce. Cover and simmer for about 10-12 minutes until pasta is al dente.
  5. Fold in fresh spinach until wilted (2-3 minutes), then return cooked chicken to the skillet and toss gently before serving warm.
