Ingredients
- 2 Tablespoons butter
- 1 small yellow onion (diced)
- 1 jalapeno pepper (diced)
- 3 cloves garlic (diced)
- 1 Tablespoon tomato paste
- 1 15 oz. can corn (drained)
- 1 10 oz. can diced tomatoes with green chilies (undrained)
- 1 15 oz. can black beans (drained and rinsed)
- 5 cups chicken broth
- 2 small boneless skinless chicken breasts (or 2 cups shredded chicken)
- 1 pinch Cayenne Pepper
- 1 teaspoon cumin
- 1–2 teaspoons hot sauce
- 1 oz. packet taco seasoning (about 3 Tbsp.)
- 1 ½ cups cheddar cheese (shredded)
- 1/3 cup cream cheese (softened)
- Corn or Flour Tortillas (for serving)
Instructions
- Heat 2 Tbsp. butter over medium heat in a large pot. Add the diced onions and jalapeno pepper. Sauté for about 5–6 minutes until soft, then stir in the garlic. Cook for an additional minute until fragrant.
- Add all remaining ingredients except for the cheddar cheese and cream cheese. Start with about 2 Tbsp. of taco seasoning; you can adjust to taste later.
- Allow the soup to come to a gentle bubble while partially covered. Avoid rapid boiling as it can make the chicken tough; slow cooking ensures it stays juicy.
- After about 20–25 minutes, remove the chicken breasts. Depending on thickness, they should be cooked through by now. Use two forks to shred them before returning them to the soup.
- Lower the heat and gradually sprinkle in the shredded cheddar cheese and softened cream cheese. Stir continuously until everything is smooth and creamy.
- Taste the soup! Add any additional seasonings if desired, garnish as you like, and serve hot with tortillas on the side.
