  • 1 can (14 oz) coconut milk
  • 1 cup tomato puree
  • 1 cup chicken broth
  • Juice of lime
  • Fresh cilantro, chopped for garnish
  • Fluffy basmati rice for serving

Instructions

  1. In a large skillet over medium heat, heat the vegetable oil. Sauté the onion until translucent, about 5 minutes. Add garlic and ginger, cooking until fragrant.
  2. Stir in spices (curry powder, turmeric, cumin, cayenne) and season with salt and pepper; cook for another minute.
  3. Add chicken pieces and brown on all sides for about 6-8 minutes.
  4. Pour in coconut milk, tomato puree, and chicken broth; mix well and bring to a gentle simmer.
  5. Lower heat and let simmer uncovered for 20-25 minutes until thickened. Stir occasionally.
