  • 1.5 lbs boneless, skinless chicken breasts
  • 1 lb rotini pasta
  • 10 cloves garlic, minced (divided)
  • 6 tbsp unsalted butter (divided)
  • 4 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • Cajun seasoning
  • smoked paprika
  • salt
  • black pepper
  • olive oil

Instructions

  1. Season chicken cubes with Cajun seasoning, smoked paprika, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Cook chicken until golden brown (6-8 minutes). Remove and set aside.
  3. In the same skillet, melt 4 tbsp butter over medium heat; add half of the minced garlic and sauté until fragrant.
  4. Cook rotini according to package instructions until al dente; reserve 1 cup pasta water before draining.
  5. In a large pot or Dutch oven, melt remaining butter; add remaining garlic and cook until fragrant.
  6. Pour in heavy cream and chicken broth; simmer gently then stir in Parmesan cheese and seasonings. Simmer for 5-7 minutes until thickened.
  7. Combine cooked rotini with sauce; adjust consistency with reserved pasta water as needed. Stir in cooked chicken.
  8. Serve immediately topped with extra Parmesan cheese and fresh chives.
