Ingredients
- 1 tablespoon olive oil or 1/4 cup water
- 1 large white onion, sliced
- 6 cloves garlic, minced
- 2 1/2 lbs. tomatoes (roma, plum, or tomatoes on the vine)
- 1/2 cup basil leaves (about 10 –12 large leaves) or 2 teaspoons dried
- 1/2 teaspoon dried oregano
- 2 cups low-sodium vegetable broth
- Salt and pepper, to taste
- Vegan cream, to serve
Instructions
- Prep the onion and garlic, slicing the onion and mincing the garlic. Cut tomatoes into quarters.
- In a heavy-bottomed pan, heat olive oil or water over medium heat. Sauté onions for about 7 minutes until translucent; add garlic and cook for 1 minute.
- Add tomatoes, basil leaves (or dried), oregano, salt, pepper, and vegetable broth; stir well.
- Bring to a boil; cover pot and reduce heat to low. Simmer for 15 minutes until tender.
- Allow to cool slightly before blending until smooth using an immersion blender or cup blender.
- Taste and adjust seasoning as needed before serving with a drizzle of vegan cream.
