Ingredients

  • 1 tablespoon olive oil or 1/4 cup water
  • 1 large white onion, sliced
  • 6 cloves garlic, minced
  • 2 1/2 lbs. tomatoes (roma, plum, or tomatoes on the vine)
  • 1/2 cup basil leaves (about 1012 large leaves) or 2 teaspoons dried
  • 1/2 teaspoon dried oregano
  • 2 cups low-sodium vegetable broth
  • Salt and pepper, to taste
  • Vegan cream, to serve

Instructions

  1. Prep the onion and garlic, slicing the onion and mincing the garlic. Cut tomatoes into quarters.
  2. In a heavy-bottomed pan, heat olive oil or water over medium heat. Sauté onions for about 7 minutes until translucent; add garlic and cook for 1 minute.
  3. Add tomatoes, basil leaves (or dried), oregano, salt, pepper, and vegetable broth; stir well.
  4. Bring to a boil; cover pot and reduce heat to low. Simmer for 15 minutes until tender.
  5. Allow to cool slightly before blending until smooth using an immersion blender or cup blender.
  6. Taste and adjust seasoning as needed before serving with a drizzle of vegan cream.
