- 1 cup sliced mushrooms (cremini or button)
- 2 slices fresh tomato
- 2 tbsp cream cheese (or dairy-free spread)
- 1 garlic clove, minced
- 1 tsp olive oil or butter
- Salt & pepper to taste
Instructions
- Boil the eggs for exactly 7 minutes. Transfer them to ice water to cool, then peel and halve.
- Toast the bread until golden brown while preparing other ingredients.
- In a skillet over medium heat, add olive oil or butter. Sauté sliced mushrooms and minced garlic for about 5-6 minutes until golden brown. Season with salt and pepper.
- Wilt the spinach in the same skillet for a couple of minutes, seasoning lightly with salt.
- Assemble: Spread cream cheese on one toast slice, top with tomato slices and parsley; add sautéed mushrooms on the second slice.
