Ingredients

  • 2 slices whole-grain or sourdough bread
  • 2 eggs
  • 1 cup baby spinach
  • 1 cup sliced mushrooms (cremini or button)
  • 2 slices fresh tomato
  • 2 tbsp cream cheese (or dairy-free spread)
  • 1 garlic clove, minced
  • 1 tsp olive oil or butter
  • Salt & pepper to taste

Instructions

  1. Boil the eggs for exactly 7 minutes. Transfer them to ice water to cool, then peel and halve.
  2. Toast the bread until golden brown while preparing other ingredients.
  3. In a skillet over medium heat, add olive oil or butter. Sauté sliced mushrooms and minced garlic for about 5-6 minutes until golden brown. Season with salt and pepper.
  4. Wilt the spinach in the same skillet for a couple of minutes, seasoning lightly with salt.
  5. Assemble: Spread cream cheese on one toast slice, top with tomato slices and parsley; add sautéed mushrooms on the second slice.
  6. Serve the toast alongside jammy eggs and wilted spinach.
