- 2 cloves garlic, minced
- 1 tablespoon chopped fresh thyme
- 3 heaping tablespoons sun-dried tomatoes, chopped
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes
- 1 teaspoon kosher salt
- 1 teaspoon Italian seasoning
- 1 tablespoon flour
- 4 cups low-sodium chicken stock
- 1 14.5oz can crushed tomatoes
- 10oz cheese tortellini
- 1 15oz can white beans, drained and rinsed
- 4 cups spinach, chopped
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese + more for serving
- Fresh basil for garnish
- Black pepper for serving
Instructions
- Heat olive oil in a large pot over medium heat. Add chicken or beef sausage and cook until browned, then set aside.
- In the same pot, sauté mirepoix veggies until softened. Add garlic, thyme, sun-dried tomatoes, and seasonings; stir for 1 minute.
- Pour in chicken stock and crushed tomatoes; bring to a boil then simmer for 5-10 minutes.
- Add tortellini and white beans; simmer until tortellini float.
- Stir in cooked sausage, spinach, heavy cream, and Parmesan cheese. Serve hot with toppings.
