  • 2 lbs Yukon Gold potatoes, thinly sliced
  • 1/4 cup balsamic vinegar
  • 3 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tbsp fresh thyme, chopped
  • Salt & black pepper

Instructions

  1. Preheat your oven to 375°F (190°C) and grease your baking dish.
  2. Thinly slice the Yukon Gold potatoes using a chef's knife.
  3. In a mixing bowl, whisk together balsamic vinegar, olive oil, minced garlic, thyme, salt, and pepper.
  4. Layer the sliced potatoes in the greased dish, brushing each layer with the balsamic mixture.
  5. Cover with aluminum foil and bake for about 45 minutes.
  6. Remove the foil and bake for an additional 15–20 minutes until golden brown.
  7. Let rest for 5–10 minutes before slicing.
