  • 1 large yellow onion (diced)
  • 1 cup carrots (thinly sliced)
  • ¾ cup celery (diced)
  • 1 tsp salt
  • 1½ tsp black pepper
  • 4 tsp garlic (minced)
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • ½ tsp dried parsley
  • 1 tbsp tomato paste
  • 2 (15 oz) cans crushed tomatoes
  • 2 (15 oz) cans cannellini beans (drained and rinsed)
  • 4 cups low sodium chicken broth
  • 6 cups water
  • 1 (16 oz) box of ditalini pasta (uncooked)

Instructions

  1. In a large skillet over medium heat, cook the turkey bacon until crispy. Drain and slice into small pieces.
  2. Add turkey bacon, diced onions, sliced carrots, diced celery, salt, pepper, minced garlic, dried thyme, dried basil, dried parsley, tomato paste, crushed tomatoes, cannellini beans, chicken broth, and water to the slow cooker. Stir well to combine.
  3. Cover and cook on low for 7–8 hours or high for 4–5 hours.
  4. Thirty minutes before serving, stir in uncooked ditalini pasta.
  5. Serve hot in bowls topped with grated Parmesan Reggiano.
