  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) diced tomatoes with juice
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked. Break apart as it cooks.
  2. Add the diced onion and minced garlic; sauté until the onion is translucent (about 3–5 minutes).
  3. Transfer the beef mixture to a slow cooker. Add kidney beans, black beans, corn, diced tomatoes (with juice), beef broth, chili powder, cumin, smoked paprika, salt, and pepper. Stir well.
  4. Cover and cook on low for about 6 hours or high for about 3 hours.
  5. Once done, stir again and taste; adjust seasonings as needed before serving hot.
