Ingredients
- 1 lb. boneless, skinless chicken breasts/thighs
- 1 (4 oz.) can diced green chiles
- 1 (15 oz.) can cannellini beans (drained)
- 1 (15 oz.) can great northern beans (drained)
- 2 tbsp fresh cilantro (chopped)
- 2 tbsp lime juice
- 2 cups chicken broth
- 8 oz. cream cheese (softened)
- 1 cup onion (chopped)
- 3 cloves garlic (minced)
- 1/2 tsp cumin
- 1/2 tsp oregano (dried)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp chili powder
Instructions
- Gather all ingredients. Chop onion and mince garlic.
- In the slow cooker, add diced green chiles, drained cannellini beans, drained great northern beans, chopped cilantro, lime juice, chicken broth, onion, garlic, cumin, oregano, salt, black pepper, and chili powder.
- Place the boneless skinless chicken on top of the mixture.
- Cover and cook on low for 7 hours or high for 4 hours.
- After cooking, shred the chicken using two forks and mix well before serving.
