Ingredients
- 2 large chicken breasts
- 1 can black beans (drained and rinsed)
- 1 can corn (undrained)
- 10 ounces Rotel tomatoes with green chilis (undrained)
- 8 ounces cream cheese
- 1 packet ranch seasoning
- 1 teaspoon ground cumin
- 1 tablespoon chili powder
- 1 teaspoon onion powder
- 1/2 cup water
- Optional toppings: cheese, sour cream, avocados, fresh tomatoes, Fritos/tortilla chips
Instructions
- Spray the bottom of your slow cooker with nonstick cooking spray.
- Layer the chicken breasts on the bottom and add black beans, corn, Rotel tomatoes, ranch seasoning, ground cumin, chili powder, onion powder, and water. Mix gently.
- Place the block of cream cheese on top without mixing it in.
- Cover and cook on low for 6-8 hours or high for about 4 hours until the chicken is fully cooked.
- Shred the chicken using two forks and stir everything together. Serve hot with optional toppings.
