- 1 cup frozen peas
- ¼ cup fresh parsley (finely chopped)
- 1 – 2 tbsp fresh thyme
- ⅓ cup whole wheat flour or all-purpose flour
- 1 tsp salt
- ½ tsp ground black pepper
- 2 – 4 cups baby spinach (optional)
Instructions
- Sauté chopped onion, sliced carrots, and celery in butter for about 6-8 minutes until soft. Add minced garlic in the last minute.
- Stir in flour until coated and cook for an additional minute.
- Pour in chicken stock, milk, diced sweet potatoes, salt, pepper, and thyme. Bring to a boil, then reduce heat and simmer for 15-20 minutes until sweet potatoes are tender.
