  • ½ cup brown sugar

  • 2 teaspoons vanilla extract
  • 8 oz dark chocolate, melted and slightly cooled
  • 3 large eggs
  • 1 ½ cups fresh or frozen cherries, pitted
  • ¼ cup granulated sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Prepare the Cherry Compote: Cook cherries with sugar and water over medium heat until softened. Mix cornstarch with water, add to cherries, and simmer until thickened. Cool completely.
  2. Make the Crust: Preheat oven to 325°F (163°C). Combine cookie crumbs, melted butter, and sugar; press into a springform pan. Bake for 10 minutes and cool.
  3. Cheesecake Batter: Beat cream cheese until smooth, then mix in sugars, sour cream, vanilla, melted dark chocolate, and eggs (one at a time).
  4. Assemble: Pour half of the batter over the cooled crust, dollop half of the cherry compote on top, and swirl gently. Repeat with remaining batter and compote.
  5. Bake: Place in a water bath and bake for 50-60 minutes until set around the edges but slightly jiggly in the center. Cool gradually in the oven.
  6. Chill & Serve: Allow to cool to room temperature before refrigerating for at least 6 hours or overnight.
