  • 1 ½ cups roughly chopped white onion
  • ¼ cup roughly chopped ginger
  • 6 cloves garlic (smashed)
  • 8 cups vegan chicken broth or vegetable broth (divided)
  • 1 oz dried shiitake mushrooms (optional)
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame oil
  • 14 oz vegan ground sausage or beef
  • ¼ cup panko breadcrumbs
  • 2 prepared vegan eggs
  • 1 tablespoon soy sauce
  • 1 tablespoon grated ginger
  • 1 tablespoon minced chives
  • 2 teaspoons rice vinegar
  • ½ teaspoon black pepper
  • ½ teaspoon granulated sugar
  • 34 baby bok choy (roughly chopped)
  • 15 wonton wrappers (quartered or sliced)
  • Sliced green onion (for serving)
  • Chili oil (for garnish)

Instructions

  1. Heat the olive oil in a small soup pot over medium heat.
  2. Add the chopped onions, ginger, and smashed garlic. Sauté for about 5 to 6 minutes until the onions begin to caramelize slightly.
  3. Pour in 1 cup of the vegan chicken broth and use a wooden spoon to scrape up any brown bits from the bottom of the pot.
  4. Add the remaining broth, dried mushrooms (if using), soy sauce, rice vinegar, and sesame oil. Bring to a light boil.
  5. Cover and simmer partially over low heat for about 30 minutes to an hour. Strain through a fine-mesh sieve after simmering.
  6. In a mixing bowl, combine all wonton filling ingredients including vegan ground sausage or beef, panko breadcrumbs, vegan eggs, soy sauce, grated ginger, minced chives, rice vinegar, black pepper, and granulated sugar.
  7. Mix well and let sit for about 5–10 minutes while your broth simmers.
  8. Carefully drop teaspoon-sized balls of filling into the simmering broth.
  9. Cover and cook for approximately 15 minutes until heated through.
  10. Stir in roughly chopped bok choy and simmer until tender (around 2–3 minutes).
  11. Drop in wonton wrappers one at a time while stirring gently to prevent sticking.
  12. Simmer for another few minutes until all wrappers are heated through.
  13. Ladle the hot broth along with filling into large soup bowls.
  14. Garnish with sliced green onions and drizzle with chili oil before serving.
