Ingredients

  • 3 ½ cups peeled fresh ginger
  • 4 cups water
  • 5 cups white sugar
  • 1 (3 oz) pouch liquid pectin
  • 5 half pint canning jars with lids and rings

Instructions

  1. Cut the ginger in half; cube one half and shred the other.
  2. Simmer the ginger with water for 1 hour and 15 minutes; drain, reserving ½ cup of liquid.
  3. Chill the cooked ginger in the fridge for at least 4 hours.
  4. In a pot, combine chilled ginger, reserved water, and sugar; boil for 1 minute.
  5. Stir in pectin and simmer for an additional 7 minutes, skimming off any foam.
  6. Sterilize jars by boiling them in water.
  7. Fill each jar with marmalade mixture, leaving space at the top; remove air bubbles.
  8. Process jars in a water bath by boiling for 15 minutes.
  9. Allow jars to cool completely before checking seals.
