- 5.5–6 cups celery (diagonally diced)
- 1 medium Honeycrisp apple (diced with skin on)
- ¾ cup dried cranberries
- ½–¾ cup red onion (finely diced)
- 1 cup pecans (toasted)
- 1 Tablespoon pure maple syrup
- 3 Tablespoons red apple vinegar
- 1 Tablespoon lemon juice
- 2 Tablespoons + 1 teaspoon tahini
- 2 teaspoons Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder

Instructions
- Wash and prepare all ingredients: dice celery and apple (keeping skin on), finely chop red onion.
- Toast pecans in a dry skillet over medium heat for about 5 minutes until golden brown; cool after toasting.
- In a mixing bowl, whisk together tahini, maple syrup, apple vinegar, lemon juice, Dijon mustard, garlic powder, onion powder, and sea salt until smooth.
