  • 1 medium Honeycrisp apple (diced with skin on)
  • ¾ cup dried cranberries
  • ½¾ cup red onion (finely diced)
  • 1 cup pecans (toasted)
  • 1 Tablespoon pure maple syrup
  • 3 Tablespoons red apple vinegar
  • 1 Tablespoon lemon juice
  • 2 Tablespoons + 1 teaspoon tahini
  • 2 teaspoons Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • sea salt to taste

Instructions

  1. Wash and prepare all ingredients: dice celery and apple (keeping skin on), finely chop red onion.
  2. Toast pecans in a dry skillet over medium heat for about 5 minutes until golden brown; cool after toasting.
  3. In a mixing bowl, whisk together tahini, maple syrup, apple vinegar, lemon juice, Dijon mustard, garlic powder, onion powder, and sea salt until smooth.
  4. In a large bowl, combine diced celery, apples, cranberries, red onion, and toasted pecans. Pour dressing over the top and toss gently until well coated.
  5. Serve immediately or chill for up to an hour before serving to enhance flavors.
