  • 1 can of minced clams, drained
  • 1 finely minced green onion
  • 1 beaten egg
  • Italian-style breadcrumbs
  • Oregano
  • Grated Parmesan cheese
  • Grated Romano cheese
  • Grated Mozzarella cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly oil a baking dish.
  2. Clean the mushrooms and remove the stems, setting them aside for another use.
  3. In a mixing bowl, combine the drained clams, green onion, minced garlic, melted butter, breadcrumbs, beaten egg, reserved clam juice, oregano, and cheeses until mixed thoroughly.
  4. Use a spoon to fill each mushroom cap with about 1 ½ teaspoons of the mixture.
  5. Place stuffed mushrooms in the baking dish, drizzle with melted butter, cover with foil, and bake for 35 to 40 minutes.
  6. Remove the foil, add remaining Mozzarella on top, and bake briefly until melted.
  7. Garnish with parsley and serve alongside lemon wedges.
