  • 1 lb lean ground turkey
  • 1 cup cooked brown rice
  • 1 cup diced bell peppers (mixed red, yellow, green)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup diced tomatoes (fresh or canned)
  • 1 avocado, sliced
  • ¼ cup chopped fresh cilantro
  • 2 tbsp olive oil
  • Juice of 2 limes
  • Salt and pepper to taste
  • 1 tsp cumin
  • 1 tsp chili powder

Instructions

  1. Cook the brown rice according to package instructions.
  2. In a large skillet, heat olive oil over medium heat. Add bell peppers and sauté for about 5 minutes until softened.
  3. Push the veggies aside and add ground turkey to the skillet. Cook for 6–8 minutes until no pink remains.
  4. Stir in black beans, diced tomatoes, cumin, chili powder, salt, and pepper. Cook until heated through.
  5. Slice the avocado and drizzle with lime juice to keep it fresh.
  6. To assemble, start with a base of brown rice topped with the turkey mixture, avocado slices, and chopped cilantro.
