  • 6 hard-boiled eggs
  • 1/2 cup plain Greek yogurt

  • 1 tablespoon Dijon mustard

  • 2 celery ribs, chopped
  • Fresh chives, chopped
  • Paprika and sea salt to taste

Instructions

  1. Cook the macaroni in boiling water for 8-10 minutes until al dente. Drain and rinse with cold water; set aside.
  2. Halve the hard-boiled eggs, removing yolks into a bowl. Chop egg whites and add them to the macaroni.
  3. Mash the yolks until smooth, then mix in Greek yogurt, mayonnaise, and Dijon mustard.
  4. Combine diced onion and celery with the macaroni and egg whites; pour in the yolk mixture and stir well.
  5. Top with chives, paprika, and salt to taste. Chill for at least one hour before serving for enhanced flavors.
