Description

Dill Pickle Pasta Salad is a refreshing dish that captures the vibrant flavors of summer in every bite. Perfect for picnics, potlucks, or casual family dinners, this creamy and tangy salad combines al dente pasta with crisp dill pickles, sharp cheddar cheese, and a zesty dressing.


Ingredients

  • 8 ounces elbow pasta
  • 1/2 cup dill pickle juice
  • 1 cup cheddar cheese (diced)
  • 1 cup sliced dill pickles
  • 3 tablespoons fresh dill (chopped)
  • 3 tablespoons white onion (finely chopped)
  • 2/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1/4 cup dill pickle juice
  • 1/4 teaspoon Sriracha (or hot sauce)
  • Salt to taste
  • 1/2 teaspoon black pepper

Instructions

  1. Cook elbow pasta according to package instructions until al dente. Rinse under cold water and drain.
  2. In a mixing bowl, combine cooked pasta with half of the dill pickle juice. Let it sit for 5 minutes before draining again.
  3. In another bowl, mix mayonnaise, sour cream, remaining pickle juice, Sriracha, salt, and pepper until smooth.
  4. In a serving bowl, combine drained pasta, cheddar cheese, sliced pickles, chopped dill, and onion. Add dressing and toss until well combined.
  5. Refrigerate for at least 4-6 hours before serving chilled.
