  • 5 butter croissants
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 cup almond flour
  • 2 tbsp plain flour
  • 1 cup water
  • 10 tbsp sliced almonds
  • 3 tbsp powdered sugar

Instructions

  1. Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. Make simple syrup by heating water and sugar until dissolved; let cool.
  3. Prepare the almond filling by mixing room temperature butter, sugar, and salt until smooth. Add eggs one at a time, then mix in almond flour and plain flour.
  4. Slice croissants in half, brush inside with simple syrup, and fill with almond cream. Top with more filling and sprinkle sliced almonds.
  5. Bake for 15-20 minutes until golden brown and set.
