- 2¼ – 2½ cups all-purpose flour
- ½ cup sugar
- 2 teaspoons baking powder
- 1 pinch salt
- ½ cup very cold butter
- 1 egg
- 2½ cups sliced peaches (fresh or well-drained canned)
- 1½ tablespoons sugar (for peaches)
Instructions
- Preheat your oven to 350°F (180°C). Grease and flour an 8-inch cake pan.
- In a medium bowl, mix sliced peaches with 1½ tablespoons of sugar and set aside.
- In a large bowl, whisk together flour, sugar, baking powder, and salt. Cut in very cold butter until crumbly.
- Stir in the egg until just combined; the mixture should remain crumbly.
- Press two-thirds of the crumb mixture into the bottom of the prepared pan. Layer the peach mixture evenly on top and sprinkle with remaining crumbs.
- Bake for 30-40 minutes until golden brown and a toothpick comes out clean.
