  • cups all-purpose flour
  • ½ cup sugar
  • 2 teaspoons baking powder
  • 1 pinch salt
  • ½ cup very cold butter
  • 1 egg
  • 2½ cups sliced peaches (fresh or well-drained canned)
  • 1½ tablespoons sugar (for peaches)

Instructions

  1. Preheat your oven to 350°F (180°C). Grease and flour an 8-inch cake pan.
  2. In a medium bowl, mix sliced peaches with 1½ tablespoons of sugar and set aside.
  3. In a large bowl, whisk together flour, sugar, baking powder, and salt. Cut in very cold butter until crumbly.
  4. Stir in the egg until just combined; the mixture should remain crumbly.
  5. Press two-thirds of the crumb mixture into the bottom of the prepared pan. Layer the peach mixture evenly on top and sprinkle with remaining crumbs.
  6. Bake for 30-40 minutes until golden brown and a toothpick comes out clean.
