Ingredients

  • 10.5 cups water or organic unsalted veggie broth
  • 1 yellow onion (peeled and halved)
  • 2 celery ribs (cut in half)
  • 3 carrots (peeled)
  • 4 garlic cloves (peeled)
  • Salt (to taste)
  • 1 cup pastina (or any small pasta shape)
  • Grated Parmigiano for garnish

Instructions

  1. In a large pot, heat water or vegetable broth over high heat. Add onion, celery, carrots, garlic, and salt. Bring to a boil.
  2. Lower the heat to medium-low and simmer with a semi-covered lid for about 45 minutes until vegetables are soft.
  3. Transfer cooked veggies to a blender with two ladles of broth and blend until smooth. Return to pot.
  4. In a separate small pot, cook pastina according to package instructions until al dente.
  5. Serve by placing pastina at the bottom of each bowl and ladling hot broth over it. Top with grated Parmigiano.
