  • 1/2 medium onion (chopped)
  • 1 pound ground turkey
  • 2 heaping tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 1 (14 ounce) can red kidney beans (drained)
  • 2 (10.5 ounce) cans Rotel Diced Tomatoes & Green Chilies (with juices)
  • 1/2 cup water or chicken broth
  • Salt & pepper (to taste)

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Sauté chopped onion until soft, about 5 minutes.
  2. Add ground turkey, breaking it up as it cooks until browned and no longer pink.
  3. Stir in tomato paste, chili powder, garlic powder, cumin, smoked paprika, and season with salt and pepper.
  4. Add drained kidney beans and diced tomatoes with their juices along with water or chicken broth. Bring to a gentle boil.
  5. Reduce heat to low; partially cover and let simmer for 15-20 minutes.
  6. Adjust seasoning as needed before serving hot with your choice of toppings.
