Ingredients
- 2 large hard-boiled eggs
- 1 ripe avocado
- 1 cup cucumber slices
- 1 cup cherry tomatoes, halved
- 2 tbsp diced red onion
- 1 cup fresh spinach leaves
- 1 tsp olive oil
- 1 tsp paprika
- Salt & freshly cracked black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Boil the eggs for 9-10 minutes until hard-boiled. Cool under cold water, peel, and slice.
- In a serving bowl, layer the fresh spinach as the base. Add cucumber slices, halved cherry tomatoes, diced avocado, red onion, and top with sliced eggs.
- Drizzle olive oil over the veggies and sprinkle with paprika, salt, and pepper to taste. Garnish with chopped parsley before serving.
