- 1 pound ground turkey
- 1 small sweet onion, finely diced
- 1 cup shredded carrots
- 3 garlic cloves, minced
- 1 teaspoon fresh ginger, minced
- ¼ cup chicken broth
- 1 small head cabbage (about 8 cups shredded)
- 3 tablespoons soy sauce or tamari
- 1 tablespoon rice vinegar
- Cooked white rice for serving
- Green onions and toasted sesame seeds for garnish
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add ground turkey and cook for about 5-6 minutes until almost cooked through.
- Push turkey to one side of the skillet; add diced onion and remaining olive oil. Cook for about 3-4 minutes.
- Stir in shredded carrots, garlic, and ginger; cook for another 2 minutes.
- Pour in chicken broth, then add cabbage, soy sauce (or tamari), rice vinegar, salt, and pepper. Stir well to combine.
- Cover and reduce heat to medium-low; cook for about 12-15 minutes until cabbage is tender.
- Remove from heat and stir in toasted sesame oil before serving over rice.
