  • 225 g cold butter, cubed
  • 1 egg yolk
  • 260 g flour
  • 70 g icing sugar
  • 40 g cocoa powder
  • 1 pinch salt
  • 1L milk
  • 3 large eggs
  • 100 g cornstarch
  • 150 g brown sugar
  • 100 g butter
  • 170 g heavy cream
  • 200 g praliné paste
  • 200 g roasted hazelnuts
  • 100 g brown sugar
  • 20 g water
  • 50 g milk chocolate
  • 50 g heavy cream

Instructions

  1. Prepare the crust by mixing cream cheese (or mascarpone), butter, flour, cocoa powder, icing sugar, and salt. Add egg yolk and form into a ball; refrigerate for 30 minutes.
  2. Preheat your oven to 180°C (356°F). Roll out the dough and place it in a tart pan; blind bake for 35 minutes.
  3. Whisk together eggs and brown sugar in a bowl; gradually add warmed milk. Cook until thickened and stir in butter and praliné paste.
  4. Pour filling into cooled crust and bake for 45-60 minutes. Cool at room temperature.
  5. To prepare caramelized hazelnuts, heat brown sugar with water until caramel forms; coat hazelnuts and cool on parchment paper.
  6. Make ganache by melting chocolate with warmed cream; pour over flan and top with caramelized hazelnuts.
