Ingredients
- 2 medium-sized oranges
- 200 grams granulated sugar
- 200 grams almond meal
- 100 grams finely ground pistachios
- 6 large eggs
- 1 teaspoon baking powder
- A pinch of salt

- Boil the washed oranges in water for about 30 minutes until softened. Let them cool.
- Cut the cooled oranges in half, remove seeds, and blend in a food processor until smooth.
- In the food processor, mix the orange puree with sugar, almond meal, ground pistachios, baking powder, and salt until well combined.
- In a large bowl, whisk the eggs until frothy. Gradually add the orange-nut mixture until fully incorporated.
- Preheat the oven to 180°C (350°F). Grease or line a 9-inch round cake pan with parchment paper.
- Pour the batter into the prepared pan and bake for 45-50 minutes or until golden brown and a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack. Dust with powdered sugar and serve.
