Ingredients

  • 2 medium-sized oranges
  • 200 grams granulated sugar
  • 200 grams almond meal
  • 100 grams finely ground pistachios
  • 6 large eggs
  • 1 teaspoon baking powder
  • A pinch of salt

Instructions

  1. Boil the washed oranges in water for about 30 minutes until softened. Let them cool.
  2. Cut the cooled oranges in half, remove seeds, and blend in a food processor until smooth.
  3. In the food processor, mix the orange puree with sugar, almond meal, ground pistachios, baking powder, and salt until well combined.
  4. In a large bowl, whisk the eggs until frothy. Gradually add the orange-nut mixture until fully incorporated.
  5. Preheat the oven to 180°C (350°F). Grease or line a 9-inch round cake pan with parchment paper.
  6. Pour the batter into the prepared pan and bake for 45-50 minutes or until golden brown and a toothpick comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack. Dust with powdered sugar and serve.
