- 8 onions
- 2 garlic cloves
- 50g butter
- 1200ml beef stock
- 15g thyme
- 400g baguette
- 150g Comté cheese
- Olive oil
- Salt
- Black pepper
Instructions
- Peel and slice the onions. Heat olive oil in a large saucepan over medium heat. Add onions and a pinch of salt.
- Cook onions until soft and pale golden, about 30 minutes.
- Add finely sliced garlic and butter; cook for another 5 minutes.
- Pour in beef stock and add thyme leaves; simmer for 10 minutes.
- Taste and adjust seasoning as needed.
- Slice the baguette into rounds, place soup in oven-proof bowls, top with baguette slices, and grate Comté cheese over each.
- Broil until cheese is melted and golden brown.
