Ingredients

  • 2 garlic cloves
  • 50g butter
  • 1200ml beef stock
  • 15g thyme
  • 400g baguette
  • 150g Comté cheese
  • Olive oil
  • Salt
  • Black pepper

Instructions

  1. Peel and slice the onions. Heat olive oil in a large saucepan over medium heat. Add onions and a pinch of salt.
  2. Cook onions until soft and pale golden, about 30 minutes.
  3. Add finely sliced garlic and butter; cook for another 5 minutes.
  4. Pour in beef stock and add thyme leaves; simmer for 10 minutes.
  5. Taste and adjust seasoning as needed.
  6. Slice the baguette into rounds, place soup in oven-proof bowls, top with baguette slices, and grate Comté cheese over each.
  7. Broil until cheese is melted and golden brown.
