Ingredients

  • 200g shrimp (peeled & deveined)
  • 1 tbsp butter
  • 1 garlic clove (minced)
  • 1 tsp paprika
  • Salt & pepper to taste
  • 1 cup white rice (jasmine or basmati)
  • 2 cups water
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup diced carrots
  • 1 tsp olive oil or butter

Instructions

  1. Rinse the rice under cold water until clear. Boil water in a saucepan, add the rice and salt, then cover and simmer for 15 minutes.
  2. Steam broccoli, cauliflower, and carrots for about 5–6 minutes until tender-crisp. Toss with olive oil or butter, salt, and pepper.
  3. In a skillet over medium-high heat, melt butter. Sauté minced garlic until fragrant (about 30 seconds). Add shrimp, paprika, salt, and pepper; cook for about 2–3 minutes per side until pink.
  4. Serve by arranging rice on a plate topped with sautéed shrimp and mixed vegetables.
