  • 1/2 teaspoon smoked paprika

  • 4 ounces fresh mozzarella cheese, sliced
  • 1/4 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Cook rigatoni according to package instructions until al dente. Drain, reserving 1 cup of pasta water.
  2. In a large saucepan over medium heat, melt butter and sauté minced garlic until fragrant. Whisk in flour and cook for about 2 minutes.
  3. Gradually stir in milk, bringing it to a simmer before adding provolone and Parmesan cheeses until melted and smooth. Season with nutmeg, salt, and pepper.
  4. In a large skillet, heat olive oil and butter. Season steaks with Cajun seasoning and smoked paprika; sear for 3-4 minutes on each side for medium-rare.
  5. Add garlic to the skillet during the last minute of cooking; top steaks with mozzarella cheese until melted.
