Ingredients
- 3.4 lb bone-in lamb shoulder, trimmed
- Salt & freshly ground black pepper
- 6 cloves garlic, smashed
- 3 tbsp Dijon mustard
- 2 tbsp honey
- 2 tbsp olive oil
- 1 cup chicken broth
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 1 bay leaf
Instructions
- Preheat your oven to 325°F (163°C). Pat the lamb shoulder dry and season generously with salt and pepper.
- In a bowl, mix smashed garlic, Dijon mustard, honey, and olive oil into a smooth paste. Rub this mixture over the lamb shoulder.
