Ingredients

Scale
  • 2 large boneless, skinless chicken breasts
  • 12 oz rotini pasta
  • 4 cloves garlic
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 cup grated Parmesan cheese
  • 4 tbsp unsalted butter
  • 1 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste
  • 1 cup grated Parmesan, for sauce
  • 2 oz cream cheese, softened
  • 1 tsp Italian seasoning
  • 1 tsp dried basil
  • ¼ tsp crushed red pepper flakes, optional
  • Chopped parsley or herbs, for garnish

Instructions

  1. Cook rotini pasta in salted boiling water until al dente, about 10 minutes; drain and set aside.
  2. Season chicken strips with Cajun seasoning and smoked paprika. Dredge in grated Parmesan for a crispy coating.
  3. Sear the chicken in a skillet with olive oil and butter until cooked through.
  4. Add garlic to infuse flavor before removing the chicken from the skillet.
  5. In the same skillet, create the cream sauce by combining butter, garlic, heavy cream, and chicken broth; whisk in cream cheese and cheeses until melted and smooth.
  6. Toss cooked rotini into the sauce until well-coated; serve topped with seared chicken and garnished with herbs.
