Description

  • 5 oz raisins
  • 5 oz dried red currants
  • 1/2 cup whole milk (lukewarm)
  • 2 tsp active dry yeast
  • 1/4 cup granulated sugar
  • 3 cups all-purpose flour
  • 1 cup ground almonds
  • 1 tsp  special occasion spice mix
  • 3/4 cup softened butter
  • 2 eggs (room temperature)
  • 3.5 oz candied citrus peel
  • 1 cup powdered sugar (for finishing)

Instructions

  1. Soak raisins and currants in boiling water until plump.
  2. Activate yeast by mixing lukewarm milk, yeast, and sugar; let froth for 5-10 minutes.
  3. In a large bowl or stand mixer, blend flour, ground almonds,  special occasion spice mix, and sugar.
  4. Add activated yeast mixture, softened butter, vanilla extract, and eggs; mix until combined.
  5. Drain soaked fruits and fold them into the dough with candied citrus peel.
  6. Knead the dough until smooth; let rise covered in a warm place for 1-2 hours.
  7. Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
  8. Shape dough into balls (about 2 oz each) and place on the baking sheet.
  9. Bake for 15-20 minutes until golden brown; cool on a wire rack.
  10. Roll warm cookies in powdered sugar before serving or storing.
