  • 2 Boneless Skinless Chicken Thighs
  • 2 Garlic Cloves
  • 15g Fresh Ginger
  • 0.5 Red Onion
  • 1 Red Chilli
  • 1 tsp Curry Powder
  • 350ml Water
  • Olive Oil
  • Salt
  • Black Pepper
  • 25g Fresh Coriander
  • 25g Fresh Mint
  • Juice of 1 Lime
  • 250g Microwave Rice

Instructions

  1. Marinate the chicken by grating half the garlic into a bowl, adding lime juice and salt, then mixing in the chicken thighs. Refrigerate for at least 30 minutes.
  2. While marinating, slice remaining garlic, cut ginger into matchsticks, and finely chop the chilli.
  3. In a frying pan over medium heat with olive oil, cook marinated chicken until charred and cooked through (10-15 minutes). Transfer to a plate to rest.
  4. In the same pan, add ginger, garlic, and chilli; fry for about 3 minutes before adding curry powder. Pour in water and simmer for 5 minutes. Finish with lime juice and season.
  5. Prepare herb salad by picking leaves from coriander and mint; combine with sliced red onion.
  6. Serve by reheating rice if needed, dividing it into bowls, pouring broth over rice, topping with sliced chicken and herb salad.
