  • 36 Tablespoons soy sauce (to taste)
  • 4 inches fresh ginger
  • 2 large cloves garlic

Instructions

  1. Sauté halved mushrooms in a large pot with olive oil over medium-high heat until browned (8-10 minutes).
  2. Add quartered carrots, halved onion, rosemary, salt, and pepper.
  3. Pour in water, bring to a boil, then reduce heat to simmer for one hour.
  4. Strain the broth to remove solids and return to the pot.
  5. Grate ginger and garlic into the broth; bring back to a gentle boil.
  6. Adjust seasoning with soy sauce before serving.
