  • 3/4 cup sugar
  • 2 tsp vanilla
  • 1/2 cup milk of choice (skim, 2%, whole or almond)
  • 2 eggs
  • 1 3/4 cup gluten-free all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/41 cup finely diced strawberries
  • 1 tbsp strawberry jam (for glaze, optional)
  • 1/2 tsp vanilla (for glaze, optional)
  • 12 tbsp milk of choice (for glaze, optional)
  • 1 cup powdered sugar (for glaze, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, beat together softened butter and sugar until fluffy. Add eggs one by one, mixing well after each addition. Stir in milk and vanilla until combined.
  3. In another bowl, whisk together gluten-free flour, baking soda, and salt. Gradually add this to the wet mixture until just combined.
  4. Gently fold in diced strawberries.
  5. Spoon batter into the muffin tin about two-thirds full. Bake for about 22 minutes or until a toothpick inserted comes out clean.
  6. Let cool before serving.
