- 1/2 cup butter (or dairy-free butter alternative)
- 3/4 cup sugar
- 2 tsp vanilla
- 1/2 cup milk of choice (skim, 2%, whole or almond)
- 2 eggs
- 1 3/4 cup gluten-free all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4–1 cup finely diced strawberries
- 1 tbsp strawberry jam (for glaze, optional)
- 1/2 tsp vanilla (for glaze, optional)
- 1–2 tbsp milk of choice (for glaze, optional)
- 1 cup powdered sugar (for glaze, optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a bowl, beat together softened butter and sugar until fluffy. Add eggs one by one, mixing well after each addition. Stir in milk and vanilla until combined.
- In another bowl, whisk together gluten-free flour, baking soda, and salt. Gradually add this to the wet mixture until just combined.
- Gently fold in diced strawberries.
- Spoon batter into the muffin tin about two-thirds full. Bake for about 22 minutes or until a toothpick inserted comes out clean.
