  • Potatoes (diced)
  • Red bell pepper (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine chicken drumsticks, olive oil, minced garlic, paprika, oregano, thyme, salt, and pepper. Toss until well-coated.
  3. In another bowl, mix diced potatoes and optional red bell pepper with olive oil, paprika, salt, and pepper.
  4. Arrange seasoned chicken on top of the potatoes in a baking dish.
  5. Roast uncovered for about 55 minutes until chicken is golden brown and potatoes are crisp-tender. Baste occasionally with pan juices.
