  • 4 small chicken breasts (about 1 1/4 pounds)
  • 1/4 cup olive oil
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • 1 1/2 teaspoons dried oregano
  • 1 1/2 teaspoons dried basil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
  • 2 cups cooked rice or quinoa
  • 2 cups halved grape or cherry tomatoes
  • 2 cups diced or chopped cucumber
  • 4 cups shredded romaine lettuce
  • 1 cup sliced red onion
  • 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber
  • 1 tablespoon minced garlic
  • 1/4 teaspoon salt (or to taste)
  • 1 tablespoon fresh chopped dill

Instructions

  1. Whisk together all ingredients for the chicken marinade in a mixing bowl until well combined.
  2. Pound the chicken to about 1/2 inch thick. Add it to a shallow bowl or ziplock bag along with the marinade. Let it marinate for at least 30 minutes; longer if you have time.
  3. Combine all ingredients for tzatziki in a bowl. Set aside in the fridge to chill and let flavors meld.
  4. Cook your rice or quinoa according to package instructions. Chop all vegetables as desired.
  5. Once marinated, preheat your air fryer to 380°F. Air fry the chicken on one side for 7 minutes, then flip it over and cook for an additional 3-4 minutes until fully cooked. Alternatively, heat oil over medium-low heat and cook each side of the chicken for about 7-8 minutes until golden brown.
  6. After cooking, let your chicken rest for about five minutes before slicing it into strips.
  7. In each bowl, layer cooked rice or quinoa followed by veggies, sliced chicken, and drizzle generously with tzatziki sauce. For extra flavor, add olive oil and lemon juice on top.
