  • 3 cups cooked pasta (rotini or penne)
  • 1 ½ cups cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red bell pepper, diced
  • ½ cup red onion, thinly sliced
  • ¾ cup kalamata olives, sliced
  • ¼ cup olive oil
  • 2 tablespoons red apple vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • Juice of half a lemon
  • 1 cup feta cheese, crumbled
  • Fresh parsley for garnish

Instructions

  1. Cook pasta in salted boiling water until al dente according to package instructions. Drain and rinse under cold water.
  2. In a small bowl, whisk together olive oil, red apple vinegar, Dijon mustard, oregano, garlic powder, salt, black pepper, and lemon juice.
  3. In a large mixing bowl, combine cooked pasta with tomatoes, cucumber, bell pepper, onion, and olives. Add crumbled feta cheese.
  4. Pour dressing over salad and toss until well coated.
  5. Chill for at least 30 minutes before serving. Garnish with fresh parsley.
