Instructions

  1. In a large skillet, layer the trimmed green beans. Sprinkle with salt and pepper.
  2. Add sliced cremini mushrooms and red onions over the green beans. Dot with pieces of butter.
  3. Pour in the low-sodium chicken stock.
  4. Heat the skillet over medium-high heat, stirring occasionally at first. As cooking continues, stir more frequently to prevent boiling.
  5. Cook until the beans are crisp-tender and mushrooms are coated in sauce (about 20 minutes). Adjust heat as necessary.
