 - 8 ounces cremini mushrooms (sliced)
 - 1 small red onion (thinly sliced)

 - 3/4 cup low-sodium chicken stock
 - Salt and pepper to taste
 
Instructions
- In a large skillet, layer the trimmed green beans. Sprinkle with salt and pepper.
 - Add sliced cremini mushrooms and red onions over the green beans. Dot with pieces of butter.
 - Pour in the low-sodium chicken stock.
 - Heat the skillet over medium-high heat, stirring occasionally at first. As cooking continues, stir more frequently to prevent boiling.
 - Cook until the beans are crisp-tender and mushrooms are coated in sauce (about 20 minutes). Adjust heat as necessary.
 - Taste and season further if needed before serving hot.
