  • Salt & black pepper
  • Smoked paprika
  • Lime juice

Instructions

  1. Preheat your oven to 425°F (220°C). Toss sweet potato wedges in olive oil, smoked paprika, salt, and pepper. Arrange on a baking sheet and roast for 25-30 minutes until golden.
  2. Season chicken with olive oil, garlic powder, lemon juice, paprika, salt, and pepper. Grill over medium-high heat for 6-8 minutes per side until cooked through.
  3. In a bowl, mix diced avocado, halved cherry tomatoes, chopped red onion, fresh herbs, lime juice, salt, and pepper to create the salsa.
  4. For the herbed yogurt dip, combine Greek yogurt with minced garlic, fresh herbs (dill or parsley), lemon juice, salt, and pepper.
  5. Assemble by layering sweet potato wedges with sliced grilled chicken in bowls. Top with avocado salsa and herbed yogurt dip.
