  • 45 cherry tomatoes, halved

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss sweet potato wedges in a bowl with olive oil, paprika, salt, and pepper until well coated.
  3. Spread them out on a baking sheet in a single layer.
  4. Roast for 25-30 minutes, flipping halfway through until golden brown and crispy.
  5. While the sweet potatoes are roasting, season the chicken strips with olive oil, salt, pepper, paprika, and garlic powder.
  6. Heat a grill or skillet over medium-high heat.
  7. Grill the chicken strips for 3-4 minutes on each side until cooked through and slightly charred.
  8. In a mixing bowl, combine diced avocado, red onion, cherry tomatoes, lime juice, and salt.
