  • 4 boneless chicken thigh fillets (skin removed)
  • 3 tablespoons olive oil
  • 100 ml lime juice (freshly squeezed)
  • 2 tablespoons cilantro (chopped)
  • 2 cloves garlic (crushed)
  • 1 teaspoon brown sugar
  • 3/4 teaspoon red chili flakes (or red pepper flakes)
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 yellow bell pepper (deseeded and sliced)
  • 1/2 red bell pepper (deseeded and sliced)
  • 1/2 onion (sliced)
  • 5 cups Romaine lettuce (or cos lettuce leaves, washed and dried)
  • 2 avocados (sliced)
  • 1 pinch cilantro (extra to garnish)
  • 1 pinch sour cream (optional – to serve)

Instructions

  1. Whisk together olive oil, lime juice, cilantro, garlic, brown sugar, chili flakes, cumin, and salt to create the marinade. Reserve half for dressing.
  2. Marinate chicken thighs in half of the mixture for at least 2 hours.
  3. Grill marinated chicken on medium-high heat for 6-7 minutes per side until cooked through. Let rest before slicing.
  4. Sauté sliced bell peppers and onions in the same pan until tender.
  5. Assemble by combining lettuce, sliced avocado, sautéed veggies, and grilled chicken in a large bowl. Drizzle with reserved marinade.
